- For the cake:
- 1-1/2 sticks butter, melted
- 1-2/3 cups sugar
- 5 eggs
- 2 teaspoons vanilla
- 2 cups flour
- 2 small boxes Jell-O pistachio pudding
- 4 teaspoons baking powder
- 1 teaspoon salt
- 2 cups milk
- For the icing:
- 1 small box Jell-O pistachio pudding
- 3 cups powdered sugar
- ¼ cup butter, softened
- ¾ cup whipping cream
- Green and white sprinkles, for optional decoration
- Preheat oven to 350 degrees. Spray a bundt pan with cooking spray (alternatively, can use a 9 x 12 baking dish).
- Place butter and sugar in a large bowl and beat with an electric mixer until combined. Beat in eggs, one at a time. Beat in vanilla.
- In a separate bowl, mix together flour, pudding, baking powder, and salt. Add dry ingredients to butter mixture, alternating with milk, and beat on low speed until combined.
- Spoon batter into prepared pan. Bake for 50-60 minutes, until done and a toothpick inserted in center comes out clean. Allow to call, then turn cake out onto a plate.
- To make icing, place all ingredients in a medium bowl, and beat with an electric mixer until smooth and creamy. Spread icing on cooled cake. Decorate with sprinkles, if using.
